About washing and drawing

After harvest, coffee must be cleared of is outer layer. We can use two methods to free the beans from the pulp.

Prestigious coffees are prepared according to Damp Method: Cherries are selected and put inside of a machine that takes out the outer layer to eliminate persistent sticky substance, we soak the beans in fermentation trays and then we wash them with water. After beans are sun dried and packed. these coffees are called “washed coffees”.

The Dry Method: Consists to prepare in one stage the coffee beans, they are spread out in one thin layer, in direct sunlight for a few weeks. Once the beans are dried, we obtain, what we call "coffee in a shell". One last sorting and we are ready to pack the coffee. This method is very used in Brazil, and it's exclusive reserved to Robusta coffees.
